Kale + Dates

Ingredients:

  • kale

  • dates

  • almonds

  • blue cheese

Homemade olive oil vinaigrette

Tip: If you plan to have salad for lunch the next day, prep the kale by giving it a “massage” with olive oil then put it in the fridge overnight. Massaging kale (yes, they’re high maintenance but very nutritious!) will break down the kale tough structure and easier to chew once you enjoy your salad!

This is one of my favorites around Spring time - your taste buds will enjoy the sweet taste of dates , the saltiness of the goat cheese and the tart lemon olive oil vinaigrette altogether!
