Honeydew Mint with a Kick

Ingredients:

  • cubed honeydew

  • pine nuts (another favorite nuts to add in my salad!)

  • mint

  • thinly sliced fresh jalapeno

  • 1/2 teasspoon fresh lemon juice

Drizzle in extra virgin olive oil and lemon juice, dash of kosher salt. Enjoy!
