Quinoa Egg Muffins
Ingredients (6 - 8 servings)
- 6 eggs 
- 1 cup cooked quinoa 
- 1 cup chopped cooked turkey (ex: Applegate brand turkey slices) 
- 1/2 onion chopped 
- 1/2 cup cheese (parmesan or cheddar, tried it both, it’s delicious!) 
- parsley chopped (2 tablespoon) 
- salt & pepper 
Mix all the ingredients above. Pour mixture to your greased muffin pan.
In a preheated oven (400 degrees), cook it for 20 minutes!
Tips:  Protein substitute:  cooked shredded rotisserie chicken, ham or tempe.  
If you make a larger batch, freeze them for future use (as breakfasts, snacks, dinner). 
You can buy frozen quinoa and just thaw it out. Or cook them ahead of time =)
