Morning Quiche

Ingredients

  • Store-bought frozen pie crust (see below)

  • 1 cup milk

  • 1/4 cup heavy cream

  • 4 eggs, slightly beaten

  • 1 tablespoon butter

  • 1/2 cup thinly sliced shallots

  • 1 cup frozen chopped spinach, thawed and squeezed

  • 1 cup shredded cheese (Gruyère, cheddar, swiss, asiago, etc.)

Note: Majority of recipes call for deep dish frozen pie crust, however by mistake, got the smaller pie crusts (sold in pairs usually found in the freezer aisle) and they turned out perfectly (same ingredients and quantity above, you just get two quiches)!

Prep the mixture 

  1. Using medium bowl whisk milk, cream, eggs, dash of salt. Set aside

Prepping the veggies (to get ahead of things, preheat your oven to 425 degrees)

  1. Saute the onions until they are soft, - 5 minutes. Set aside to cool.

  2. if using frozen spinach, make sure you run hot water over it, drain & squeeze the remaining moisture from the spinach

  3. Fill up the frozen crust

    • Spread the onions at the bottom of the crust

    • Sprinkle shredded cheese over it

    • Add and spread the spinach

    • Finally, carefully add the milk mixture on top

Baking Instructions

  1. In a preheated oven (425°F), bake for 15 minutes.

  2. After 15 minutes, adjust temperature down to 325 degrees

  3. Continue to bake for 40 minutes.

  4. Cool 10 minutes before cutting into wedges.
